Annouimo is a kind of very sweet, sweet potato. Coming from Tanegashima island in Kagoshima prefecture, this particular sweet potato is especially good for making desserts.

I would say It is a gourmet sweet potato. It’s juicy and when baked, it turns almost creamy. Farmers have to carefully sort the potatoes. The potatoes can spoil quite easily due to their thin layer of skin and a higher water content than other sweet potatoes.

This cake was baked in a simple aluminum tray (12cm×5cm×3cm). They slow bake the cake because aluminum is a good thermal conductor.

I had a bite. Wow! It was sweet and I could definitely taste the sweet potatoes. The sweetness didn’t taste artificial, rather I tasted the natural sweetness of the potatoes. The Annouimo was so creamy and I enjoyed the popping sensation from the black sesame seeds. It was a good combination.

The bottom layer was cookie dough. When I ate it with the potato filling the dessert was even sweeter and I enjoyed the harmony.

This time I ate it cold, but I think it would be a good idea to try to warm it up and eat it as well.
