This shape seems quite strange for a cheese cake. It looks just like whipped cream, but when I touched it, it was much firmer.
Embedded in the cake was a sour berry sauce.
First I tasted the white part of the cake. It was as fluffy as mousse melting in my mouth. It had a nice cheesy flavour and just the perfect amount of sweetness. It tasted really rich! The berry sauce had a natural sourness and a surprising popping sensation from the raspberry seeds.
Fromage blanc has a very mild aroma and flavour, so even those who don’t normally like cheese will enjoy this cake. Watch out, the fluffy texture can be addictive!
