Soba no Sato Ibuki

This restaurant is operated directly by Breathe Farm Ibuki, an agricultural cooperative producing environmentally conscious rice, barley, and the historic Ibuki Zairai Soba. Grown continuously on the slopes of Mt. Ibuki since Japan’s Heian period (over 1,000 years ago), Ibuki Zairai Soba is characterized by its small grains, which, when stone-ground, include more of the outer hull. This gives the soba a distinctively wild, aromatic, and robust flavor highly prized by soba connoisseurs.
At Soba no Sato Ibuki, noodles are freshly made in-house from stone-ground soba flour. From Monday to Wednesday, guests can savor the darker, richly flavored "Hikigurumi" soba, ground whole-grain including hulls. From Friday to Sunday, the restaurant serves the smoother, lighter-colored "Marunuki" soba, made by grinding hulled grains. Both cold dishes, such as chilled "Mori Soba" or "Oroshi Soba" accented with spicy Ibuki daikon radish, and hot dishes like "Kake Soba" or "Sansai Soba" with wild mountain vegetables, are available. Don’t miss the 100% buckwheat soba (Juwari Soba), available on weekends and limited to just 20 servings per day.
