There are three menu options. The signature dish is the Raw Nodoguro Rice Bowl, limited to just five servings per day. Other choices include the Charcoal-Grilled Nodoguro Rice Bowl and the Half & Half Nodoguro Rice Bowl, which combines sashimi with flaked nodoguro. Guests can choose from 12 toppings such as salmon roe, truffle salt, yuzu pepper, and chirimen sansho.
