Fuku Usagi
A familiar treat known for its cute, round rabbit shape.
Soft and springy in the hand, these small steamed buns come filled with carefully crafted sweet bean paste. The rounded rabbit shape is hard to forget, and each one is made with the hope that visitors to Kanazawa will enjoy something delicious and feel happy.
There are five classic fillings available year-round. They include Gorojima Kintoki (a Kaga traditional vegetable variety of sweet potato), Noto Dainagon (known for its large beans and vivid, jewel-like red color), Bocha (roasted tea stems long loved in Kanazawa), Noto pumpkin (with a gentle sweetness nurtured by Noto’s rich climate), and Ishikawa yuzu (with a strong aroma and refreshing flavor). Each one features an ingredient that represents Ishikawa’s local specialties.
From September to November each year, a seasonal limited edition made with large chestnuts appears as well. Another fun option is the deluxe “Kin no Fuku Usagi,” a gorgeous Kanazawa-style version topped with gold leaf.
