“Tamanaha Miso Soy Sauce” has been in business for more than 170 years, with a factory near Shuri Castle, still preserving the taste of miso that has been used by the royal family of the Ryukyus. The company's miso, made with natural brewing and without additives, is deeply loved by the locals.

A natural brewing method that combines whole soybeans, Shimamasu (salt from Okinawa), and homemade yeast for fermentation and maturation. Compared to the usual process of preparing miso in the cold winter and fermenting and maturing it over the course of a year, Okinawa's high temperature and humidity, with an average annual temperature of 23 degrees, makes it possible to prepare miso in any season. The short fermentation time also results in miso with a natural sweetness.

The "Ōchō (Dynasty) Miso" made with flavorful Japanese whole soybeans and rice malt has a mild sweetness and flavor that goes well with any dish, and is also a signature product that is a perfect match for dipping vegetable sticks in. The lineup also includes "Shuri Miso," which is used in school lunches at kindergartens and nursery schools in the prefecture, and "Tokusen Miso," a combined refreshing-tasting miso, allowing customers to choose according to their needs. “Ucchin Miso", which combines rice miso with turmeric, is another product with an addictive taste that has many ardent fans.
