Kinseiken “Daiginjo Kasutera”

Founded in 1902. Kinseiken has over 120 years of history in Daigahara-juku, Yamanashi, long known as a prosperous post town. Using traditional methods that make the most of nature, including the famed waters of the Ojiragawa River, they offer simple, handmade sweets made with care.

This castella is made using daiginjo sake lees from long-established breweries in Yamanashi Prefecture, and it’s a fan-favorite gift item that boasts the No. 1 sales spot among Kinseiken’s gift products.

Baked using only egg whites, it has a pure-white look, and one bite reveals a moist, gentle texture. It feels almost like a soufflé cake.
