Founded in 1876, Udon & Soba Yoshino is the original creator of Noppei Udon, a renowned specialty of Nagahama City in Shiga Prefecture. Inspired by the kudzu-based dishes popular in Kyoto, the restaurant's founder created this dish by simmering shiitake mushrooms, yuba (tofu skin), kamaboko (fish cake), and wheat gluten in a secret broth, thickened with Yoshino kudzu starch and served atop noodles.
The distinguishing feature of Noppei Udon is its thick, savory sauce, which keeps the dish piping hot—a perfect choice during Nagahama's snowy winter months. Topped with fresh ginger, it not only warms the body but also adds a sharp accent to the rich flavors.
In addition to Noppei Udon, the restaurant offers a variety of local delicacies like Saba Somen (mackerel noodles) and grilled mackerel sushi, along with a diverse menu including udon, soba, and rice bowls. Dishes featuring premium Omi beef are also available. All noodle dishes can be complemented by locally grown Koshihikari rice or grilled mackerel sushi as part of a set meal.
Yoshino also operates an adjacent café, and in the evenings transforms into "Shunsai Dining YOSHINO," a reservation-only venue offering a selection of alcoholic beverages and seasonal dishes.
