The signature dish is the "Original Karamen." Since its debut in 1987, it has continued to evolve while remaining a longtime favorite. One of its key features is the noodles. Often called "konnyaku noodles," they are made with buckwheat flour and wheat flour and have a unique texture similar to konnyaku. The chili peppers that determine the level of spiciness are carefully selected from several varieties and blended. Combined with Masumoto's secret soup, they create a flavorful bowl of spicy noodles packed with umami. Another popular order alongside karamen is the "Masumoto Specialty Nankotsu." This tender simmered cartilage, eaten with ponzu sauce, also pairs perfectly with beer. In addition to several kinds of karamen, the menu also includes special gyoza and fried rice.
