With the philosophy of “Never forget the essentials, and pursue quality thoroughly,” it serves carefully handmade ramen and gyoza. Since opening, it has been loved by many people both in and outside Miyazaki Prefecture.
The signature dish is the “Yataibone Ramen.” Its defining feature is the soup, blended with the restaurant’s own recipe using three styles: aromatic, light, and rich. The soup is continuously topped up and prepared every single day without fail. The noodles are carefully developed to match the soup, with thin noodles offering a firm bite and aroma, and medium-thick noodles with a smooth, tender texture. The chashu is made with pork from Miyazaki Prefecture and slowly marinated in a replenished sauce for a juicy finish. The “Yataibone Gyoza” is carefully wrapped to keep in the vegetable and meat juices, then cooked with lard for a crisp texture.
