The key to the flavor is the soup, made by simmering mature chicken bones and vegetables for at least 7 hours to draw out their rich umami. Served in an earthenware pot, it stays piping hot while you eat. Other popular choices with many repeat customers include Garlic Horumon, Ankake, and Aka-Kara. You can choose your noodle firmness from extra firm, regular, or soft. Takeout is also available.
