Ohata Foods Co., Ltd. “Walnut Snacks”

“Walnut Snacks” is a Japanese-style confection made by Ohata Foods, a long-established producer of tsukudani in Kanazawa, Ishikawa Prefecture. Made using traditional tsukudani techniques, it has become popular alongside the company’s signature tsukudani products.

Inspired by the history of kenjo kurumi—walnuts once presented as gifts to the Kaga Domain—the company slowly roasts high-quality, large walnuts. Artisans then carefully cook them in a large kettle, giving them a crisp, aromatic, and light texture.

Available in a variety of flavors, including maple, Ono soy sauce, Noto salt, brown sugar caramel, and ginger caramel, the walnuts have a refined sweetness that brings out the flavor of the ingredients. Their glossy amber coating, covered in natural sugar crystals, is also visually appealing. They pair well not only with coffee or tea but also with alcoholic drinks. Combining traditional techniques with modern flavors, they are also popular as a souvenir from Kanazawa.
