Sushi-Go-Round Kantaro Tokyo
Conveyor-Belt Sushi from Hakodate: Seasonal Seafood Straight from the Source and Carefully Prepared Rice.
Originally from Hakodate, conveyor-belt sushi restaurant Kantaro puts “heart and soul into every piece.” At Sushi-Go-Round Kantaro Tokyo, on the B1 floor of First Avenue Tokyo Station, chefs handcraft each piece using carefully selected seasonal seafood sourced directly from across Japan, with a focus on Hakodate and the rest of Hokkaido.
The sushi rice is an original blend of several varieties grown in Hokkaido. The size and frequency of the batches are carefully adjusted so the rice is served at about body temperature. Seasonal toppings include Fresh Whelk and Fresh Surf Clam, delivered live in their shells and prepared at the restaurant. You can also try House-Made Vinegar-Cured Mackerel, with the amount of salt and the vinegar-curing time adjusted to suit the season.
A gold-toned exterior and lattice-patterned washi paper lighting give the restaurant a distinctive look. It has 70 seats, including counter seats around the conveyor belt. Watch the chefs at work just across the counter as you enjoy seasonal seafood delivered directly from the source.
