The signature dish is Tokyo Station Premium Seafood Tonkotsu Ramen. It features a blend of two broths: a seafood broth made with honkarebushi (aged, dried bonito) and Rishiri kombu kelp, and a meat-based broth made from pork and chicken bones. The custom-made noodles use 100% Japanese wheat, combining the Hokkaido varieties Haruyokoi and Kitahonami with stone-ground flour from Nagano Prefecture. Each bowl is topped with two slices of meltingly tender chashu (seasoned pork) and large pieces of menma (seasoned bamboo shoots). A wide range of toppings is available, including seasoned eggs and extra chashu. Side dishes include Aburi Niku Gohan, rice topped with seared meat.
