Founded in 1861. A soba restaurant located just a short distance from Tendo Park, it’s a long-established spot that has continued for over 160 years.

A large waterwheel stands in front of the shop, and even today, using a traditional method, they turn this waterwheel to grind buckwheat with a millstone. The soba, made with 100% whole-ground pure buckwheat flour, is exceptional. You can enjoy its outstanding flavor, aroma, and smooth finish.

It’s an authentic soba restaurant, but another specialty here is a ramen dish called “Tori Chuka.” It originally started as a staff meal, but after guests in the Tendo hot spring area tried it, it was offered as a secret menu item. It quickly became popular through word of mouth, and eventually made it onto the regular menu.

The noodles are Chinese-style ramen noodles, while the soup has a light, purely Japanese-style flavor. Toppings include chicken, tempura bits, and nori seaweed. Finished with a kick of pepper, it has a slightly spicy taste that you’ll crave. Now known as “Yamagata’s Tori Chuka,” it’s a local specialty that draws many repeat visitors every day.
