Opened in 2017, this was Murakami City’s first specialty salmon restaurant, located in a region of Niigata Prefecture known as Japan's "town of salmon."

Operated by Sennenzake Kikkawa, a renowned local shop famed for its salmon processing, Izutsuya serves exquisite salmon dishes crafted exclusively from natural ingredients through meticulous, traditional fermentation and aging techniques. Meals here are complemented perfectly by freshly steamed rice.

The restaurant is housed in a historic machiya townhouse, recognized as a Nationally Registered Tangible Cultural Property. Historically, this building served as the Izutsuya inn during Murakami's days as a thriving post town. It is notably documented that in the Edo period, the legendary haiku poet Matsuo Bashō and his disciple Sora stayed here for two nights during their famed Oku no Hosomichi journey.

The restaurant’s featured course, the Eight-Dish Salmon Set, showcases iconic Murakami specialties such as "Shiobiki Salmon" (salted salmon), sake-infused salmon (Sake-bitashi), and grilled pickled salmon (Yaki-zuke), allowing guests to fully savor Murakami’s exceptional salmon cuisine.
