As the taste and flavor of fish can change depending on its environment and the time of year, the chef always keeps an eye on the season of the ingredients and serves them when they are at their best. They are very particular about only serving up fish purchased that day.

The recommended item to try is “kiwami”, a luxe, 10-pc nigiri sushi set featuring “toro” (fatty tuna), “uni” (sea urchin roe), “ikura” (salmon roe) and other select, seasonal delicacies from Niigata. The kiwami set is a local, exclusive collaboration featured at 20 or so beloved sushi shops across Niigata City. (Exact contents of the kiwami set may vary by restaurant.)

Another popular menu item to try is the “echigo no chiso” (lit. “Niigata feast”), which combines traditional local dishes and the kiwami sushi menu.
