The secret is in the painstakingly hand-kneaded dough and a varied thickness that’s adjusted to the heat of each season to ensure a consistently optimum bite. The broth is a tasteful blend of premium ingredients including Hokkaido kelp, dried sardines from the Seto Inland Sea, mackerel flakes, and bonito flakes all simmered down for 15 hours to draw out endless umami.
