Su-Manumee

Okinawa soba with pork belly, tebichi, and soki served in a traditional red-tile house.

This specialty Okinawa soba restaurant occupies a renovated traditional house with a red-tile roof in a residential neighborhood on the outskirts of Naha City. Surrounded by tropical plants and shisa lion-dog statues, it’s a popular spot to enjoy Okinawa soba in a distinctly Okinawan setting. Along with its charming indoor seating, the garden terrace is also open for dining.

The signature Special Soba is a hearty bowl that lets you compare three kinds of toppings: soki (spare ribs), sanmainiku (pork belly), and tebichi (pig’s trotters). Each meat is simmered with its own seasoning and paired with a broth based on bonito and pork stock. The soup has a light, gentle flavor, so it’s also recommended to adjust it to your taste with the table seasonings, such as ichimi chili pepper, pickled ginger, and koregusu, an Okinawan condiment. As for side dishes, the Okinawan local favorite “juushii” is especially popular.

As this is a popular restaurant and it closes once sold out, visiting early is recommended. Also, the parking lot is located a short distance from the restaurant, so be sure to check the official Instagram in advance.
