Shinshu Togakushi Sobanomi

Sobanomi is a soba restaurant located near Togakushi Chusha in Nagano City, Nagano Prefecture. It uses whole buckwheat sourced from contracted farmers in Togakushi, ground fresh every morning with a stone mill before being served. The restaurant is known for serving Togakushi soba made using traditional methods.
There are six kinds of cold soba, including zaru soba, ume oroshi soba, and Soba Zanmai. There are also three kinds of hot soba, including kake soba and kake tororo. Soba Zanmai lets you compare three dipping sauces: Nagano-grown oni walnut sauce, grated Japanese yam, and the standard sauce. The a la carte menu also includes tempura, fried miso rolls, smoked duck, and smoked Shinshu salmon. The dipping sauces and toppings also change with the seasons.
There are 53 table seats. The interior features a mountain lodge-style design with a wood-grain theme. Large windows look out onto the surrounding forest. Nearby are Togakushi Shrine and walking trails, creating a setting where you can enjoy a meal while experiencing the natural environment and local culture.
