It has become well known both locally and beyond for serving carefully crafted ramen from this long-established brewery.
A standout feature is its rich soup, made without any chemical seasonings and blended with the restaurant’s own miso and carefully selected ingredients from across Japan. The ramen mainly comes in two varieties, Yamabuki Red and Yamabuki White. Each highlights the flavor of a different miso, offering a rich, full-bodied taste that still feels clean and easy to enjoy. Other menu items include Meat Miso Ramen topped with plenty of rich special meat miso, as well as gyoza made with miso kneaded into the filling.
The restaurant itself, renovated from a former miso storehouse built Approx. 200 years ago, is also worth seeing. You can enjoy your meal in a historic setting unlike that of other ramen shops. Many tourists also visit in search of Shinshu miso ramen served in this extraordinary atmosphere.
