Its signature dish is, of course, hegi soba. It is made with stone-milled buckwheat flour from Ojiya and funori seaweed as a binding agent. It also pairs perfectly with the slightly sweet dipping sauce made from a blend of honkarebushi bonito flakes from Makurazaki and mackerel flakes.
