Established in 1958 (Showa 33), this shop's signature is its "hand-kneaded" noodles. The flat, aged, high-moisture noodles are meticulously kneaded by hand right before boiling, achieving a supremely chewy and springy texture. The clear soup, slowly simmered from pork bones, is light yet rich, perfectly complementing the noodles.
The most popular dish is the simple "Shina Soba," topped with melt-in-your-mouth special roast pork, green onions, and bamboo shoots.
