Suikoen Mizusawa Main Store is a restaurant specializing in Mizusawa udon, one of Japan’s three great udon varieties. Carrying on a tradition of more than 400 years, it is dedicated to additive-free house-made noodles made with high-quality wheat, natural spring water from the foothills of Mount Mizusawa, and salt only. Its unique three-stage aging method creates noodles that are both supple and pleasantly firm.
The signature dish is the “Maitake Tempura Zaru Udon,” enjoyed with soy-based dipping sauce and sesame-walnut dipping sauce. The maitake mushrooms used are Gunma-grown “100-Day Maitake,” raised for twice the usual growing period. You can enjoy their rich umami, satisfying texture, and aroma. Sets pairing tempura with dishes such as “Zaru Udon” and “Kake Udon” are also popular. Each dish is served at the perfect timing, with noodles freshly boiled and tempura freshly fried. The broth, made from domestic kombu and a blend of dried fish flakes, offers deep umami that stands up beautifully to the aroma of the wheat.
The restaurant is located at the foot of the famous Ikaho Onsen, along the Mizusawa Udon Highway. The surrounding area is a sightseeing district lined with around 14 udon restaurants. It’s a great place to enjoy authentic Mizusawa udon while exploring Gunma.
