Kaga Hantei is a long-established traditional Japanese restaurant in Yamashiro Onsen, Kaga City, Ishikawa Prefecture. Founded in 1975, it serves dishes made with an abundance of carefully selected ingredients from the Kaga region. Kutani ware and Yamanaka lacquerware crafted by artists from Kaga City are used for the tableware. Along with the cuisine, you can also experience Kaga’s food culture through the dishes’ presentation.
Kaga Hantei’s specialty is “Sakaami duck.” These dishes are made with wild duck caught through a traditional duck-hunting method that has continued since the Edo period (1603–1867). Its signature dish is the original “Kamo Jibu Nabe,” inspired by the local specialty jibuni. In this dish, lightly parboiled duck loin lets you fully enjoy the meat’s tenderness and rich flavor. In addition to course meals and kaiseki cuisine, the restaurant also offers a la carte dishes and boxed meals. At lunchtime, set meals such as the “Mini Kaiseki Set” and “Kamo Jibu Nabe” are served.
The exterior is striking, with an entrance welcomed by stone paving. The restaurant is a three-story building equipped with private rooms and a large banquet hall. It is a space where you can feel the atmosphere of a long-established Japanese restaurant.
