Among all of traditional Japanese sweets, kuzumochi is made through a unique process of lactic acid fermentation, creating its unique chewy texture that so many love. It’s made by setting flour starch in a 450-day fermentation process. The resulting kuzumochi is served without any preservatives, which means it must be enjoyed within 2 days. This natural product is considered a health food, which makes people love it even more.
