It is the headquarter of a popular motsunabe restaurant that has expanded to Tokyo, Osaka, and Aichi, with 21 branches nationwide. Many customers visit the restaurant every day for "Oyama-style Hakata Motsu-nabe," which is made with carefully selected ingredients and perfected through a process of trial and error. The motsu used are carefully selected only from Wagyu beef, mainly from Kyushu. In addition, only the small intestines of young, fatty beef are used, and each slice is cut into 10g pieces to achieve a plump and superb texture.
Three types of soup are available. The standard "motsunabe miso flavor," which is ordered by about 90% of customers, is a blend of several kinds of miso, including Kyushu miso and Saikyo miso, with a special sauce to create a "rich and delicious" taste. The "motsunabe soy sauce flavor," which combines a proprietary blend of soy sauce sauce and triple broth of motsu, vegetables, and seafood, and the light-flavored "motsunabe mizutaki style," served with ponzu vinegar with grated radish, are also popular.
The restaurant also offers Hakata-style side dishes such as "Soft Beef Sumotsu," made from beef entrails, "Three Kinds of Horse Sashimi," which is purchased directly from a ranch in Kumamoto, and "Oyama's Hakata Mentaiko," which has a clear grain texture.
