Coffee beans are purchased from all over the world by green bean buyers and green bean specialists, who purchase the best quality beans at that time from all over the world each season. Furthermore, in order to maximize the individuality of the carefully selected beans, they are carefully roasted in the company's roastery using recipes tailored to each bean's characteristics. Peak flavor is then measured for each bean (the period when the flavor is most pronounced)
The roastery then sends only the freshest beans directly from the roastery to the cafe so that they can be served within the peak flavor period (the period when the flavor is at its peak) measured for each bean.
