Freshly prepared every morning, the broth is made from aromatic Kochi-grown urume-bushi, mackerel flakes, and premium kombu from Hokkaido. Just before serving, ultra-thin 0.01-mm shavings of freshly shaved honkare-bushi are added at the counter, allowing you to enjoy a deeply fragrant broth with refined umami. The udon noodles are handmade every morning, with the dough blended by skilled artisans to suit the day’s temperature and humidity.
