Shokudo Hasegawa was founded in 1982 in Kitakata, Fukushima Prefecture. Its limited-time shop on Tokyo Ramen Street is its first location outside the prefecture to operate for an extended period. It respects the traditions of Kitakata ramen while pursuing its own distinctive bowls, with close attention to ingredients and preparation methods.
The signature dish is Soy sauce ramen with large char siu pork. Its clear broth is simmered for hours using carefully selected Japanese chicken and aokuchi niboshi (dried Japanese anchovies) from Kujukuri. It is paired with custom-made, medium-thick curly noodles made with the high-hydration dough typical of Kitakata ramen. The generously sized chashu (seasoned pork) is another standout, made by slowly cooking Japanese pork belly for four hours with soy sauce from Aizu as the only seasoning.
Karami Shoyu Ramen, a spicy soy sauce ramen, is available as a Tokyo Station exclusive. It features a spicy miso blend based on Aizu’s traditional garlic and chili miso. Right in Tokyo Station, you can experience Kitakata’s ramen culture and the restaurant’s distinctive flavors, refined at every stage from ingredients to preparation.
