Approx. 7 minutes by car from JR Yamagata Station. Sakaeya Honten is the place to try Yamagata’s local specialty, hiyashi ramen. After training for 12 years at a long-established soba restaurant, the first owner opened the shop at its current location in 1932. In response to a customer asking, "If there is cold soba, can’t you make a cold version of chuka soba?", he developed hiyashi ramen and launched it in 1952. Today, it is loved by people both in and outside Yamagata Prefecture as a classic sign of summer in Yamagata.

The most popular item is the original hiyashi ramen, which was created here. It is enjoyed not only in the hot summer but also throughout winter. The shop also offers a wide variety of noodle dishes, including chuka soba and nameko ramen. Fresh soba and udon are also available, with both hot and cold options, so you can enjoy them in any season. The chashu topping also uses beef.

The charming interior features both tatami seating and tables. It is a relaxing space where people of all ages can enjoy a leisurely meal. Many celebrity autographs are displayed inside, showing just how popular the shop is. You can also order from the online shop, making it possible to enjoy the original taste at home.
