The restaurant’s specialty is its “Echizen 100% Buckwheat Soba.” Made with a custom blend based on stone-milled buckwheat flour from Fukui Prefecture, each batch is carefully handmade using artisan techniques, with the preparation adjusted depending on the temperature and humidity. It also pairs perfectly with the restaurant’s rich house-made white dashi, full of depth, richness, and umami. In addition to soba, the menu also features kama-meshi, rice cooked over an open flame.
