The signature dish is “Chuka Soba.” It features thin, hand-cut curly noodles and a clear soy sauce-based soup made with pork bones and vegetables. The flavor is light, yet rich and full of umami. “Chashu Men,” topped with tender pork and richly flavored fat with a hint of sweetness, is also popular. Other menu items include “Wonton Men” and the summer-only “Hiyashi Chuka Soba.” For toppings, you can add egg (boiled or raw), and rice is also available as a side.
