This sushi restaurant is part of "Edo Noren" where you can enjoy sophisticated Edo food culture in front of JR Ryogoku Station.
You can enjoy authentic Edo-style sushi that has been handed down since the Edo period.
In addition to procuring fresh seafood, they employ careful techniques for traditional sushi including "rounding it off with vinegar", "simmering", and "soaking in soy sauce".
For rice, they have rice from Yamagata, and also "red sushi rice" made with their meticulous red vinegar they make themselves that has fermented for five years.
Their popular "toasted sushi" is made with splendid alfonsino, rosy seabass, medium-fatty tuna, salmon, and more.
