In addition to procuring fresh seafood, they employ careful techniques for traditional sushi including "rounding it off with vinegar", "simmering", and "soaking in soy sauce".
For rice, they have rice from Yamagata, and also "red sushi rice" made with their meticulous red vinegar they make themselves that has fermented for five years.
