Founded in 1789 during the Edo period, this long-established soba restaurant has been dedicated to the craft for over 230 years. Its specialty, Sarashina Soba, is made from pure white buckwheat flour milled from the core of the grain, free from husks or outer layers. The noodles have a subtly sweet, delicate flavor and an exceptionally smooth texture. Historically, they were even served to Edo Castle and feudal lords’ estates.

In addition to Sarashina Soba, the menu includes Mori Soba, made from darker buckwheat flour milled in-house from grains sourced across Japan, as well as Seasonal Flavored Soba, incorporating seasonal ingredients into Sarashina noodles.

A variety of traditional soba restaurant side dishes are also available, such as Itawasa (fish cake with wasabi), Tamagoyaki (rolled omelet), and simmered herring. Guests can enjoy these small plates with sake, then finish with soba for a quintessentially refined dining experience.
